Dialing in your dose. Every cup is your own, but here’s a suggested baseline:

• Espresso: Fine to medium grind. Ideal for cortados (2 oz coffee, 2 oz milk) or cappuccinos. 27-30 second extraction time.
• Pour over: Course to medium grind. Water temp 195-205 degrees F. Use abaca, high-flow filters.
